Romantic Poetry

Valentine's day is almost upon us.  A day of roses, chocolate, champagne and poetry.  Most poetry, now days, is found in song.  My choices in romantic songs are obviously biased by when I came of age.

 Please comment.  What songs, or poetry, define civilization's high-water mark for beauty and romance?
